Ingredients

2 c. Sliced Summer squash
1/2 tsp. freshly ground black Pepper
1/2 tsp. sea salt
1 Tbsp. Olive Oil,
1 clove minced garlic, 1
1 Tbsp. light butter blend, (60% corn oil margarine and 40% butter)
3 C. Mixed Vegetables (Broccoli, Cauliflower, Carrots)
Directions
lightly saute the squash in the olive oil & butter. Add the mixed vegetables and saute for about 3-5 minutes or until crisp-tender. Add salt and pepper. Serve. Makes 6 servings
