1 Lemon Zest - (zest 1 tsp)
3 Tbsp Dijon mustard
3 Tbsp light mayo (I used canola)
12 lg. chicken drumsticks skin removed (about 3 lbs)
1 c panko bread crumbs
1/2 c finely grated Parmesan cheese
2 Tbs olive oil
1/8 tsp cayenne pepper
1/8 tsp salt (i used salt substitute)
1/8 tsp black pepper
Arrange rack in top 3rd of oven
grate 1 tsp peel into a pie plate.
In large bowl stir dijon and mayo together until blended. Add chicken and toss until evenly coated.
Add to pie plate: panko, parmesan, oil, cayenne, salt & pepper. Dredge chicken, shake off excess and place on lined large baking pan.
Once all chicken is coated bake 30 min or until chicken juices run clear. (I cooked additional 5 minutes.)
