Introduction

This is an italian skillet way of cooking chicken. This recipe is for people like me that like LARGE SERVINGS. It is a good base for a variety of dishes. Or for a couple days of food. High protien, low carb, low sodium if you cook it right. This is an italian skillet way of cooking chicken. This recipe is for people like me that like LARGE SERVINGS. Ingredients

    Chicken Breasts
    Low Sodium Diced Canned Tomatoes
    Mushrooms
    Red Onions
    Garlic
    Shallots
    Basil
    Salt Substitute
    Pepper
    Cooking Spray

Directions

I make it in a sauce pan with cooking spray and chicken breasts that I cube up. When it is halfway cooked add a bunch of onions and mushrooms, lotso garlic and basil. Salt or substitute and pepper to taste, when the chicken is all the way done add a can of diced tomatoes (look for low sodium). I did this as a skillet as 4 servings which is BIG so you could probably cut the serving size in half. This is great with whole wheat noodles or flat-out bread wraps. Add parmesean, low-fat mozzarella, or low-fat mayo for taste as you prefer...

Another thing you can do is roast up peppers and zucchini to mix in with this if you are avoiding carbs or the extra calories from noodles.
