Rhubarb Snack Supreme

Introduction

If you like a tangy snack...with some healthy additives (flax and almonds)... If you like a tangy snack...with some healthy additives (flax and almonds)...
Number of Servings: 4

Ingredients

    Rhubarb - 6 stalks
    Orange Juice - 2 0z
    Honey - 3 tbsp
    Flax Seed - ground - 2 tbsp
    Almonds - 8 whole - sliced or chopped

Directions

Cut rhubarb into 1-2" slices
If whole almonds - slice or chop into large (rather than small pieces).

Bring rhubarb and OJ to a boil (you may have to add some water).

Add other ingredients.

Simmer on low heat until rhubarb is soft.

I like to eat this plain - just in a bowl as a snack.

I will also use it over frozen yogurt ...or on toast instead of jelly.
