Amazing Broccoli Soup

Introduction

Seriously, drop what you're doing and make this right now! A super creamy broccoli soup without the guilt! It is soooo good and packed with veggies. You won't regret it.

You can substitute cream cheese, evaporated milk or heavy cream for the mascarpone cheese. I wrote the recipe using mascarpone because I always have it on hand, but anything will work.

Number of Servings: 2

Ingredients

    Broccoli, fresh, 1.5 cup, chopped
    Spinach, frozen, 1 cup
    Carrots, raw, 2 small
    Celery, raw, 1 stalk, large
    Onions, raw, .5 small
    Garlic, 4 cloves
    Olive Oil, 1 1tsp
    Chicken Stock, low sodium, 1/2 cup
    Mascarpone Cheese, 1 tbsp
    Juice from 1/2 lemon
    Salt and pepper to taste

Directions

Chop up garlic, celery, onion, and carrots. The smaller you chop them, the faster they will cook. Add all veggies along with olive oil to pot. SLOWLY cook them with chicken stock. covered so they get soft without picking up any brown colors from caramelization. When they are soft, add the broccoli and spinach (I used frozen for both), cover and bring to a boil. As soon as it comes to a boil, blend with either a submersion blender or dump it into a regular blender. Blend until completely smooth and creamy, then return to pan and stir in lemon juice, mascarpone cheese, salt and pepper.

Makes 2, 1 cup servings, but can easily be doubled, tripled or increased anyway you like.
