Introduction

This is a variation of a recipe for Strawberry Bruschetta found on Fitness.com via EatingWell.com. I made the original version and, although I enjoyed it, found that the wheat bread overpowered the strawberries. The next night I decided to use blackberries instead. Voila! The perfect dessert! Ingredients

    2 slices whole-wheat bread
    6 tsp dark brown sugar
    1 tbsp lemon juice
    1 small container (5.5oz) blackberries
    2 tablespoons mascarpone (Italian cream cheese)

Directions

Toast bread.

While bread is toasting, heat a pan over high heat. Add sugar, lemon juice, and blackberries. Mash the blackberries to release the juices.

Heat until the mixture starts to bubble and the berries are heated through.

Spread 1 tablespoon mascarpone on each piece of toast. Top with the warm berries. Enjoy!
