Katy's Almost Heaven Cheesecake

Ingredients

    4 oz. (1/2 regular 8 oz. pkg.) reduced fat cream cheese, room temperature

    1 6 oz. container low fat yogurt--vanilla bean flavor
    natural without gelatin, Tillamook from Oregon is great!

    2 eggs

    1 pat unsalted butter

Directions

Preheat oven to 400 degrees F.

Lightly grease a small baking dish with the butter.

Allow cream cheese to soften at room temperature. Blend in yogurt until creamy; add vanilla extract and blend. Beat eggs separately until foamy and then add them to cream cheese/yogurt mixture slowly. Blend well until all is creamy.

Pour into greased dish. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and continue baking for additional 20 minutes. Remove from oven and allow to cool. Serve as is or with fresh or dried fruit.

Add your own graham cracker or vanilla wafer crust and bake in a pie pan for a more traditional treat. I have even used a flour tortilla in a pinch.

Tailor your flavor with the choice of yogurt--there is just enough sugar in the yogurt to satisfy your sweet tooth. Lemon squeeze or cherry will be my next attempt. Enjoy!
