Basil orange chicken (GH)

Introduction

Found this in a magazine and made a few changes. Found this in a magazine and made a few changes.
Number of Servings: 4

Ingredients

    1 large orange
    2 lemons
    1/2 cup fresh basil chopped
    salt & pepper ( I used salt substitute)
    4 boneless, skinless chicken breasts, pounded with flat meat mallet to 1/2-inch
    2 tsp sugar

Directions

Serves 4 main dishes

Grate 1.5 tsp of orange peel - set aside
squeeze 4 tbs of juice from orange - set aside
Grate 1.5 tsp of lemon peel - set aside
squeeze 1/3 cup lemon juice - set aside

In medium bowl combine 1tsp of each peel and 1 tbs of orange with 1/2 of the basil, 1 tbs of olive oil, 1/4 tsp salt, 1/4 tsp pepper. Add chicken to citrus and toss/turn to coat, cover and set aside.

In small bowl or mixing cup, combine sugar, 1/8 tsp salt, 1/8 tsp of pepper and remaining peels, juices, basil and oil. cover and set aside.

Heat ridged grill or outdoor grill to medium high.

Add chicken to hot grill pan or place on grate. Cook about 4 min and turn and cook 3-4 min longer until no longer pink in center.

Drizzle citrus sauce when serving.

(Recipe prepared in magazine with side of couscous and sugar snap peas. )
