Easy Cheesie Veggie Omelet with Zing!

Introduction

I don't like my eggs overcooked, and I always end up having trouble folding the egg over ... so I just cut the egg in half and sandwich the cheese in between! Number of Servings: 1

Ingredients

    PAM spray, 2-second shot
    1/8 cup onion, diced
    1/8 cup red peppers, diced
    1/8 cup zucchini, shredded

    2 large eggs, whisk until mixed

    1 slice Kraft Fat-Free Cheese Slice
    6 pickled hot pepper rings, chopped

Directions

1. Spray frying pan with PAM. Add onions, red peppers and zucchini. Stir-fry on medium-high heat (7-8) until soft, about 3 minutes.

2. Turn the heat down to medium (5-6), remove frying pan from heat while adding the eggs to the stir-fried mixture. Put back on heat and continue cooking the eggs until done. I try to keep the eggs as in tact as possible - more like an omelet than scrambling the eggs. You can cut the egg in half if easier to flip, try not to burn the eggs.

3. When done, put 1/2 of the omelet in a bowl. Top with the cheese slice. Put the other 1/2 of the omelet on top of the cheese slice and then top with the pickled hot pepper rings.
