Flat Bread with Scallions

Introduction

From Eating Well - Modified with half whole wheat flour and half unbleached white flour. You could up the olive oil to 3T and leave out the sesame oil and scallions for a good basic flat bread. Ingredients

    Whole Wheat Flour, 1.5 cup
    Flour, White unbleached, 1.5 cup
    Baking Powder, 2 tsp
    Scallions, raw, 6 large
    Olive Oil, 2 tbsp
    Trader Joe's Toasted Sesame Oil, 1 tbsp
    Water bottle w/ filtered water, 1 cup

Directions

1. Sift all dry ingredients together
2. Add finely chopped scallions
3. Mix water and oils together
4. Make a well in dry ingredients and add water and oils
5. Kneed until smooth and elastic about 5 minutes
6. Wrap in plastic wrap and rest for 30 minutes
6. Cut in 12 pieces and make into balls
7. Roll out in disks about 8 inches
8. Cook on medium heat in a lightly oiled skillet or griddle about 1 -2 minutes until site. When bubbles form on one side it is time to flip over. They sould be a light golden brown and light on fluffy.
