Yummy Eggs

Introduction

This is a breakfast that I came up with when I did not have time to eat before I ran off to work. It takes me a few minutes to put together and keeps me full all morning. Number of Servings: 1

Ingredients

    1/2 c Egg Whites
    1 Green Onion Sliced
    1 clove garlic (pressed)
    1/4 c Green Bell Pepper Chopped
    1/4 c Tomato Choppedomato
    1/8 c Feta Cheese
    2-3 Fresh Mushrooms Sliced

Directions

Throw all ingredients in a microwave safe bowl and cook in microwave for 1-2 minutes. Low calorie, low fat, and high protein breakfast! Makes 1 big serving. if this is too much reduce the egg to 1/4 cup.
I have also experimented with adding black beans and other vegetables that I might have on hand. Possibilities are endless!

    I don't like eggs but really enjoy this recipe! It definitely doesn't taste low in calories and it is so easily modifiable to the tastes you like. I've taken to pepperjack cheese and a couple slices of budding ham in it. Talk about a protein kick! - 4/28/10
