Maggie's Enchiladas

Ingredients

1 tbsp Wondra Flour
1 tbsp Ketchup
1 tbsp Chili powder
Water as needed
3-4 oz 93% lean ground beef (4 oz used for calculations)
(Any meat or beans could be substituted)
1 tbsp chopped onion
1 egg
1 tbsp 1% milk
Salt and pepper to taste
2 corn tortillas
Oil (approx 1/2 tbsp)
1/4 cup shredded cheddar cheese
Directions
Mix Wondra flour, chili powder, and ketchup plus small amount of water. Heat over medium heat until thick. Very quick.
In separate skillet brown ground beef and onion together, may season with chili powder if desired.
In another skillet scramble egg with milk and seasonings.
In another skillet heat oil.
On baking sheet smear 1/3 of chili mixture.
Fry one tortilla in oil.
Place on smear. Smear with 1/3 chili mixture.
Spread on ground beef and onion mixture. Put on 1/2 cheese.
Fry other tortilla.
Place on top. Smear with last of chili mixture.
Spread on scrambled egg and last of cheese.
Place in preheated 350 degree oven until cheese is melted and all is hot (approximately 5 minutes).
Serve with chopped lettuce on top. Also may serve with sour cream, salsa and/or guacamole as desired.
Low fat cheese, beans instead of meat will decrease calories.
Serves one.
