Jenn's perfect low cal salad

Great, huge salad for dinner Great, huge salad for dinner
Number of Servings: 1

Ingredients

    1/2 piece of grilled chicken
    1 cup of chopped cherry tomatoes
    2 cups of spinach leaves
    About 1/2 cup of sliced red onion
    1/4 cup of crumbled feta cheese
    1/2 cup of cucumbers
    small handful of seasoned croutons (about 8-10)
    2 Tbsp=1 serving of Ken's Steak House, Lite Olive Oil Vinaigrette with Balsamic Vinegar Salad Dressing,

Directions

This makes one big plate of salad... so you can use it as a side dish, eat it all yourself, double/triple the recipe and feed more people.. super yummy!

1. Grill chicken (I usually do this the night before... we will grill something else and just put the chicken on. The chicken is great cold in the salad).

2. Take a small frying pan and spray it with Pam or another nonfat, non calorie cooking spray... place onions in the pan and cook until browned (cooking the onions is amazing. It changed the whole flavor of the salad).

3. Chop all the veggies and chicken and toss together for salad. Add dressing.

** I usually slice my cucumber the night before and put it in tuberware. I fill the tuberware mostly with water and add about 1/2 cup or so of white vinegar... this really gives the cucumbers a little extra kick.
