Number of Servings: 16
Avocados, California (Calavo or Haas), 4 fruit without skin and seeds, chopped
Red Ripe Tomatoes, 4 medium whole (2-3/5" dia), diced
Red Onion, raw, 1 small, diced
Cilantro, raw, chopped without stems, 6 tbsp (optional)
Jalapeņo Pepper, diced, Mt. Olive, 3 tbsp or fresh
Black Beans, S&W (whole can), 15 oz, rinsed and drained
Yellow Sweet Corn, Frozen, 1 cup kernels, thawed
Limes, 2 fruit (2" dia), juice from
*Diamond Crystal - Kosher Salt, 0.25 tsp
Pepper, black, .25 tsp
Combine all ingredients. Cover and refrigerate approximately 2 hours or more. Serve as a dip with baked tortilla chips or an an accompaniment to grilled meat or fish, Mexican entrees, or as a side-dish salad. Should get at least 16- 1/4 cup servings.
