Chicken Cordon Bleu Flat Dish

Introduction

It's a very basic chicken cordon bleu only it's unwrapped - this recipe compliments to my husband being generous and pounding out my chicken breasts to prepare for my regular CCB recipe... only to beat them to a pulp so they were too holy/tore up to use as a single wrap version.

This version has a little "zing" to it because of the pepperjack cheese - it can be completely substituted out for swiss cheese without causing an upset in the nutritional information.

I actually think I like this one better than the other!

Ingredients

    5 chicken breasts, flattened
    1 pack of 90 calorie Budding Ham
    3 slices of Kraft Free Singles: Pepperjack Cheese
    3 slices of Kraft Free Singles: Swiss Cheese
    1/4 cup Egg Beaters Egg White Substitute
    1/4 cup Italian seasoned bread crumbs
    10 sprays (2 servings) I Can't Believe It's Not Butter spray

    NOTE: The pepperjack cheese gives this recipe a little bite - you may want to substitute it out for swiss cheese (add 2 slices of swiss to the already 3 slices in the recipe).

Directions

Preheat oven to 350'F.

Layer the flattened chicken breasts out in a 9x13 pan to make a "crust."

Tear the cheese into pieces and sprinkle both kinds over the entire layer of chicken.

Spritz the top of the dish with the ICBINB Spray. Two sprays per chicken breast should be adequate.

Layer the budding meat over the chicken and cheese. I separate it out piece by piece so I get ample coverage.

Pour the egg beaters egg white over the meat layers. Use a spoon or bakers spatula to spread it out evenly over the dish.

Evenly spread the bread crumbs over the dish.

Bake for 25-30 minutes or until the chicken is done.

Cut into 6 equal servings and serve.

Makes 6 servings: 1 serving = 1/6 of the (approximately 3"x4" piece)
