6 medium red potatoes (4" diameter) 1/2 c. red peppers finely chopped 1/2 c. onion finely chopped 1/2 c. celery finely chopped 2 tbsp. dill cracked black pepper
1/2 c. olive oil 1 tbsp. dijon mustard 1 tbsp light mayo 1 tbsp balsamic vinegar cracked black pepper

cook potatoes and cut into bite size pieces. Toss with peppers, onion, celery, dill and cracked pepper. Skake together olive oil, mustard, mayo and vinager. Stir into potato mixture and add cracked pepper and salt to taste.
FANTASTIC, but made a few changes. 1/4 cup shallots instead of onions, roasted the pepper, 1/2 the oil, and added fresh green beans (cook with potatoes towards the end). delish! OH-- and i omitted the dill.
