Introduction

I LOVE cookies! But I DON'T love the choices they force me to make on my eating plan for the day. I adapted this recipe from a bunch of *other* cookie recipes, finding ways to cut the calories and still try to maintain that irresistible "cookie" taste and texture. I LOVE cookies! Number of Servings: 60

Ingredients

    Whole Wheat Flour, 2.25 cup
    Baking Soda, 1 tsp
    Salt, 1 tsp
    Applesauce, unsweetened, .5 cup
    Parkay, Original Stick Margarine, 0.5 cup
    Splenda Brown Sugar Blend, .75 cup
    Splenda, .75 cup
    Vanilla Extract, 1 tsp
    eggbeater, 2 serving
    Fresh & Easy Alpine Trail Mix (12 oz bag)

Directions

Cream together margarine, Splenda, vanilla and applesauce. Add Eggbeaters. Mix flour, baking soda and salt in a separate bowl, then mix dry mixture into wet. Stir in trail mix.

Drop by spoonfuls on ungreased cookie sheet and bake in a preheated 375-degree oven for about 9 minutes, or until lightly browned. Remove from oven and let cool on sheet for 2 minutes, then transfer to wire racks.

Remember to keep dough chilled in between batches and let sheets cool completely between batches.

Makes 60 cookies.
