Introduction

Breakfast scramble based on a childhood favorite Breakfast scramble based on a childhood favorite
Number of Servings: 4

Ingredients

    1/2 C. Diced Onions
    1 1/2 C. Diced Extra Firm Tofu
    2 Small potatoes diced
    1 C. Sliced Bell Peppers
    2 TBS Olive Oil
    salt & pepper to taste
    mixed seasoning blends to taste. I use Trader Joe's Poultry Grill & Broil Seasoning Mix

Directions

Precook diced potatoes in a bowl in the microwave for 2-3 minutes until half cooked.
Warm Olive Oil in a large skillet over medium high heat. Add onions and saute until tender. Add potatoes and saute. Season with salt and pepper. Once onions are translucent add tofu. When potatoes and tofu have begun to turn golden, add bell peppers. Add seasoning mix. When bell peppers are tender, and potatoes are browned remove from heat and serve. Makes 4 2/3 cup servings.
