Cheddar Chicken and Rice Skillet

Ingredients

    1/2 c Fat Free Italian Dressing
    2 Boneless/Skinless Chicken Breasts cut in strips
    2 c brown rice
    1 1/4 c 99% ff chicken broth
    2 c small brocolli florets
    1 tomato diced
    2 oz cheddar cheese grated
    1/2 c sliced green onions


Directions

Heat dressing in large skillet on medium-high heat. Add chicken, cook and stir chicken for 2 min. Stir in rice, broth, abd broccoli. Bring to boil., cover, reduce heat to low and simmer 5 min o until chicken is cooked through andrice tender. Let stand 5 min or until liquid is absorbed. Add tomatoes, cheese, and onions. Stir until blended.
Makes 4 servings about 1.25 cups each
