Garlic Smashed Potatoes

Introduction

A great side dish for roast beef. A great side dish for roast beef.

Ingredients

    2 lb red potatoes
    1/2 C milk, nonfat
    3 Tbsp Brummel & Brown spread
    1 Tbsp parsley, dried
    3 cloves garlic, pressed
    1 1/2 tsp salt
    1/2 tsp black pepper, or to taste

Directions

Dice red potatoes, removing blemishes and eyes. Leave peel on. Put in medium-sized pot, covering with water. Cook at medium-high heat until potatoes begin to boil. Reduce heat to low.

Once potatoes are soft, pour off water. Add remaining ingredients. Whip with mixer until potatoes are smooth.

Serving size = 1/2 cup
