Greg's Homemade Chicken Noodle Soup

Introduction

Ingredients

    2 Tbsp. Olive Oil
    1 lb bag of frozen mixed peas and carrots
    5 oz. chopped onion
    9 oz. chopped celery
    2 bay leaves
    salt and pepper
    8 cups Swanson All Natural Chicken Broth (fat free)
    1.5 lb boneless skinless chicken breast, diced
    12 oz. No Yolks Egg White Pasta
    Tony Chacheres original creole seasoning
    Crushed Red Pepper
    Herbes de Provence

Directions

Place a large pot over moderate heat and add olive oil. Saute all vegetables in olive oil. Add bay leaves and season veggies w/salt and pepper. Add broth to the pot and raise heat bringing the liquid to a boil. Add diced chicken and return to a boil. Reduce heat to moderate. Boil chicken for 2 minutes and add noodles. Cook an additional 6 minutes or until noodles are tender and remove from heat. Stir in herbs and spices, remove bay leaves and serve. Add up to 2 cups of water if you want a brothier soup, this soup is thick. Spices can be substituted for parsley and dill if you don't want it spicy.

Yields twelve 10 oz. servings.
