Introduction

A nice hearty meal that can be spiced up just how you like it. This meal packs lots of protein, fiber, and vitamins! A nice hearty meal that can be spiced up just how you like it. This meal packs lots of protein, fiber, and vitamins!
Number of Servings: 6

Ingredients

    1/2 each: onion and red or green pepper, chopped
    1 lb. lean ground beef
    1/2 cup water
    1 can (28 oz/796 mL) diced tomatoes
    1 Tbsp. chili powder
    1 tsp. each: salt, dried oregano and garlic powder
    1-1/2 cups instant white rice (Minute Rice)

    Optional: (not included in nutritional information)
    1 Chopped Japaleno Pepper
    3/4 cup shredded Parmesan cheese

Directions

BROWN onion, peppers and beef; drain. Add water, tomatoes and seasonings. Bring to a boil and boil about 2 min. Stir in rice. Cover and remove from heat. Let stand for 5 min.

Sprinkle cheese on top (optional).
