No Meatball Italian Wedding Soup

Introduction

Quick, easy, and tastes just like Grandma's - without the added calories and fat of meatballs! Quick, easy, and tastes just like Grandma's - without the added calories and fat of meatballs!
Number of Servings: 12

Ingredients

    2 large cans chicken broth
    1 box frozen spinach (thawed)
    1 med onion
    1/3 cup minced garlic (to taste)
    1/2 box of acini de pepi (bitty pasta)

Directions

Coat soup pot with olive oil spray and sautee the onions. When the onions start to soften add the thawed spinach, and then a few minutes later add the garlic. Sautee all together for a few minutes (until the garlic starts to brown), then add the chicken broth and bring to a boil. When soup base reaches a boil, add 1/2 box of acini de pepe and boil for 10 minutes. Turn heat down to low and simmer for 1/2 hour (give or take, personal preference). Then, enjoy!
