Omelet: Spinach, Tomato And Feta

    3 large fresh eggs
    1/4 cup chopped tomatoes
    3 Tbsp crumbled feta cheese
    1.5 cup baby spinach
    Salt and pepper to taste


1. Heat a nonstick skillet coated with nonstick cooking spray over medium heat.

2. Saute the spinach until reduced. Add tomatoes and cook for 2 minutes

4. Whisk eggs and pour eggs over mixture. Cook for 2 minutes or until eggs begin to set

5. Add feta cheese

6. Flip when eggs are browned to your taste and cook other side.

Makes 1 omelet
