Uno's Inspired Stuffed Chicken

Introduction

Since our local Uno's closed down, I could not have my favorite dish from them any more. So, through some trial and error, I've created a dish that I love just as much as their Baked Stuffed, but is nearly half of the listed calorie content! Number of Servings: 1

Ingredients

    Ingredients are based on a 7-person dinner. Adjust accordingly.

    Stuffing:
    About 5 Roma or Plum Tomatoes, finely diced
    About 2 cups Baby Spinach, thinly shredded.
    About 2 cups shredded mozzarella cheese
    About 3 tbsps (or three sprigs) of Parsley (Basil also works), chopped
    1 Head of Broccolli, finely chopped

    About 7 Chicken Breasts
    ~1 cup of mozzarella (optional)

Directions

Preheat Oven to 375 degrees.

Mix the stuffing
1. Mix all of the stuffing ingredients together in a large bowl.

Prepare the chicken
2. Thouroughly wash and dry the chicken.
3. Butterfly the chicken. To butterfly, you cut the chicken in the middle of the side, and work your way in. Do not completely slice through. The breast should fold open like a book.
4. If necessary, place a sheet of plastic or parchment paper over the chicken and use a clean mallet, working from the middle outward, to pound the meat thin.

Assembling
5. Grab a handful of the mix, and place inside the butterflied chicken.
6. Fold chicken over. Sometimes it will stay on its own, sometimes you may need a toothpick to pin it down. Stuffing may spill out either end.
7. Place finished breast into a baking pan.
8. Repeat for each breast. Arrange in pan as best able.
9. If any stuffing is left over, I like to use it to fill any empty areas of the pan.
10. Top with a thin layer of mozzarella (optional)

Baking
11. Place baking pan in oven, and let cook for 45 minutes.

1 Stuffed Breast = 1 Serving
