High-Protein Swiss Bircher Muesli
Introduction
A healthy vegetarian breakfast containing 30g protein, 12g fibre, 2 portions of fruit and good fats from seeds. Ingredients

150g plain Greek yoghurt
3 heaped tablespoons rolled oats
1 heaped tablespoon oat bran
1 heaped tablespoon mixed seeds
100g raspberries (frozen or fresh)
Half scoop (15g) vanilla whey protein powder
2 tablespoons (30ml) cold water
1 apple, grated
Directions
The night before:
Mix the yoghurt, oats, bran, seeds and raspberries in a bowl, cover and refrigerate overnight to allow the grains and seeds to soften and the berries to thaw.
In the morning:
Dissolve the whey protein powder in the water and stir through the muesli. Add the apple to the mix immediately after grating it to prevent oxidation.
