Introduction

I usually make this one to take for lunch during the week. Lots of protein and veggies, and it looks so colorful, I don't get bored. I usually make this one to take for lunch during the week. Lots of protein and veggies, and it looks so colorful, I don't get bored.

Ingredients

    2 15 oz. cans black beans (or 3 1/2 cups cooked black beans)
    1 pint cherry tomatos
    1 medium bell pepper, chopped (I use red or yellow for color)
    4 green onions, chopped
    3 Tbsp. chopped fresh cilantro

    Dressing:

    3 Tbsp. lemon or lime juice
    2 Tbsp. Olive oil
    1 garlic clove. minced (or 1 tsp dried.)
    3/4 tsp. cumin
    1/2 tsp. salt
    1/4 tsp. pepper

Directions

Mix first 5 ingredients in medium bowl.
Mix dressing ingredients in small bowl. Pour over salad and toss. Can be eaten right away, but it''s even better if left to sit for a couple of hours.
