Turkey bacon & veggie frittattaSubmitted by: CRUNCHY721
1 cup cottage cheese
2 tomatoes, chopped
1 handful spinach, torn
1.5 cups frozen corn
8 slices turkey bacon, chopped
Canola or olive oil
Preheat oven to 350-400 and make sure broiler is on.
Beat eggs and cottage cheese in large bowl
Heat oil over medium high heat in a deep, oven-safe skillet (like cast iron)
Add chopped turkey bacon and fry until crispy
Add corn, then tomato and spinach
Saute over medium heat until vegetables are lightly cooked and corn is no longer frozen
Add egg mixture
Cook over medium heat. As eggs begin to solidify, use a plastic spatula to lift around the sides and bottom and allow the liquid egg mixture underneath the cooked. Do this until the frittatta is mostly solid, but still liquid on the top.
Put the pan in the preheated oven. Cook for 5-10 minutes until almost solid. Top will still be shiny.
Move to just underneath the broiler until top is cooked through and just begins to brown. Remove from heat and cool.
