Lentil Potato Stew

Ingredients

    1.25 lbs potato chopped
    1 cup dry lentils
    2 small onions, chopped
    2/3 cup sweetened coconut shredded
    2 tbsp curry powder
    1 tsp cumin
    1.5 tsp ginger
    1 clove garlic minced

Directions

Boil 1 cup of lentils in a few cups of water. At the same time, saute onion and garlic in oil till onion just starts to carmelize.

Once lentils are boiling for a couple minutes, add potato. When onion mixture is carmelized, add to the lentils and potatoes.

When potatoes and lentils have softened a bit (you might want to put a lid on them for a little bit), add curry, cumin, ginger and coconut. Change this to taste.

Cook (adding water if necessary) until lentils and potatoes are cooked through.
