Quinoa salad

Number of Servings: 4

Ingredients

    1 cup quinoa
    2 cups of veg. broth
    1 whole tomato
    1 cucumber
    2 tbsp olive oil
    lemon juice
    salt, pepper, garlic powder to taste

Directions

Cook quinoa and veg. broth on medium heat for 25-20 minutes...until quinoa is fluffy

mix chopped tomato, chopped cucumber, olive oil, and seasonings once quinoa is cooled. Mix canned chicken last, chill and serve.
