8 oz. Fillet of Orange Roughy
1 T. Balsamic Vinegar
1/4 T. Extra Virgin Olive Oil
1 t. Grey Poupon Mild and Creamy Dijon Mustard
Salt and Pepper to taste
Place fish fillet on large piece of aluminum foil set on top of baking pan. Mix together the mustard, balsamic vinegar and olive oil and spread over top of fish. Sprinkle with salt and pepper to taste. Fold foil up loosely into baking packet.
Bake in 400 degree oven. Cooking time may vary depending on thickness of fillet and whether fish is fresh or frozen. (I baked it for 10 minutes for a frozen fillet.)
Serves 2 (4 oz portions)
Try different types of fish fillets
Top with... Capers / Sliced olives (green, black and kalamata are all good) / Chopped tomatoes... (what else can you suggest?)
