Barefoot in Paris Sausage Lentil Soup (I. Garten)

Introduction

Cover lentils in boiling water. Let rest for 15 minutes. Saute onions and leeks in olive oil for 10 minutes. Add carrots, celery and spices and garlic. Saute 10 minutes more. Add lentils and broth tomato paste. Heat to boiling and simmer for 1 hour. Add sliced kielbasa and wine and warm through. Use fully cooked kielbasa. Cover lentils in boiling water.     3 qts. Chicken broth
    1 pound Lentils
    1 tbsp chopped Garlic
    3 tbsp chopped, fresh thyme
    2 tbsp red wine
    Salt and Pepper
