Vegetable Quinoa

Ingredients

    1/4 Onion chopped
    1/2 Summer squash sliced think
    1/2 Zucchini sliced thin
    1/4 c Shiitake mushrooms sliced thin
    1/2 c Quinoa
    3/4 c chicken stock (made from one bouillon cube and 1 cup water)
    Butter flavored nonstick cooking spray

Directions

Heat the onion in the cooking spray in a pan over low heat until it softens. Add the rest of the vegetables and sautee in spray until just softened. Add the quinoa and sautee for one minute and then add the chicken stock. Cover the pan tightly and simmer over very low heat until all moisture is absorbed for 20 to 25 minutes. Fluff and serve.
