Light General Tso's Chicken

    1-1/4 c long grain brown rice
    1/3 c cornstarch
    1 pound snow peas, trimmed and halved cross wise
    4 cloves garlic, sliced
    2 teas fresh ginger, grated and peeled
    3 TBS light brown sugar
    2 TBS soy sauce
    1/2 teas red pepper flakes
    2 large egg whites
    1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
    2 TBS vegetable oil
    salt and pepper to taste


1. Cook rice and set aside. Mix 1 TBS cornstarch with 1/2 cold water until smooth. Add snow peas, garlic, ginger, brown sugar, soy sauce and red pepper flakes. Toss to combine and set aside.
2. In another bowl, whisk together egg whites, remaining 3 TBS corn starch, 1/2 teas. sald and 1/4 teas. pepper. Add chicken and toss to coat.
3. In a large nonstick skillet, heat 1 TBS oil over medium high heat. Lift half of the chicken mixture (shaking off excess) and add to skillet. Cook until golden, 6-8 minutes. Transfer to a plate and repeat with remaining oil and chicken. Set aside.
4. Add snow pea mixture to skillet. Cover and cook until tender and sauce has thickened (3-5 minutes). Return chicken to skillet (with any juices) and toss to coat. Serve with rice.
