Chicken Fried Rice

Introduction

Ingredients

    2 tbsp canola oil
    3 green onions, chopped
    1 clove garlic, chopped
    2 boneless, skinless chicken breasts, diced
    1 cup frozen mixed vegetables, thawed
    2 cups low sodium stir fry sauce
    3-1/2 cups cooked brown rice

Directions

Heat canola oil in a wok or large skillet. Add green onions, garlic and chicken. Cook until chicken is no longer pink. Add the mixed vegetables and cook until crisp-tender. Add rice and stir-fry sauce and cook until heated through.

Makes six one-cup servings.
