Noodles Romanoff

Introduction

These noodles are a creamy, slightly tangy, DELICIOUS twist on plain ol' pasta for a side dish. I use Whole Wheat noodles to amp up the fiber and nutrition, and low fat sour cream to lower the calorie content.

My mom and I call these "Noodles Roaming Away," since they're really a twist on an old recipe of which neither of us remembers the origin.

Number of Servings: 6

Ingredients

    8 oz. dry, Whole Wheat Egg Noodles
    6 tbsp (1/4 cup plus 2 tbsp) Low Fat Sour Cream
    1 pat light margarine
    2 tbsp. parmesan cheese
    Salt and Pepper to taste

Directions

Boil and cook the egg noodles as directed, then drain.

Melt the margarine in the same pot, then add back the noodles and coat in the margarine. (Very little of this actually ends up in the dish, but it really keeps the noodles from sticking to the bottom of the pot!)

Add the sour cream and stir to coat. Add the parmesan cheese, a pinch of salt, and all the black pepper you could want. Toss again, letting the parmesan get just a tiny bit melty.

Serve with your favorite main dish -- great with chicken breasts, turkey patties, meat loaf, chicken or soy sausages,
or just a medley of roasted vegetables!

Makes 6, 3/4 cup servings.
