Introduction

Strawberry jello is the secret ingredient in this easy homemade freezer jam. I have found people who said they hate rhubarb, but I've never found anyone who didn't like this jam. Strawberry jello is the secret ingredient in this easy homemade freezer jam. I have found people who said they hate rhubarb, but I've never found anyone who didn't like this jam.
Number of Servings: 200

Ingredients

    16 cups chopped rhubarb
    1/4 cup water
    6 cups sugar
    1-6 oz pkg strawberrry gelatin (Jello)
    2 pkg unflavored gelatin (Knox)

Directions

Cook rhubarb and water over medium heat, stirring occasionally, until it becomes mushy and falls apart. Add sugar to the rhubarb mush. Mix jello, and unflavored gelatin together then add to the rhubarb mush (mixing it before adding prevents the gelatin from getting lumpy). Stir until sugar is dissolved. Pour into jars or containers and store in the freezer.

This recipe can also be adapted by using other fruit/jello combinations. This jam can also be canned by processing in a hot water bath for 5 minutes.

Makes about 6 pints. Nutrition facts are per tablespoon serving.
