Minestrone soup

Number of Servings: 3

Ingredients

    2 medium slices bacon
    2 tsp olive oil
    1/2 medium brown onion, chopped finely
    1 clove garlic, crushed
    1/2 stick celery, chopped coarsely
    1 small carrot, chopped coarsely
    1/2 medium zcuchini, chopped coarsely
    2 cups chicken stock / vegetable stock
    1 cup water
    60g dry pasta (1 cup cooked)
    1/2 400g can white beans
    1 400g can diced tomatoes

Directions

Fry onion, garlic and bacon in oil until onion softens. Add celery and carrot, cook stirring for around 5 minutes. Add stock, water and tomatoes and bring to boil. Add zucchini, pasta and beans. Cook uncovered until pasta is cooked, around 15 minutes.

Serve topped with Italian parsley and / or shaved Parmesan cheese.
