Turkey and Veggie Stir-Fry

Introduction

One evening it was too hot to use the gril, so I decided to throw everything into the wok that was going to go on the grill. This was fantastic over rice!

You can even make a sauce by deglazing the pan with about 1/4 Cup of Wine and adding Chicken Broth (Fat Free Low Sodium) and about 1 Tbsp of flour for a super low calorie gravy/sauce

Number of Servings: 4

Ingredients

    1 Package of Ground Turkey Breast (this recipe included a .83 lb package)
    1 Large Red Bell Pepper diced
    1 Large Onion Diced
    1 Large Zucchini Diced
    2 Cloves Garlic Minced
    1 Tbsp Olive Oil
    1 Tbsp Hamburger Seasoning (Grillmates)
    1 Tsp Onion Powder
    1 Tsp Garlic Powder
    Salt and Pepper to Taste

Directions

I cookd this up in a Wok

Add 1 Tbsp Olive Oil to the wok, add onions and sautee for 4-5 minutes until they begin to soften.

Add the ground turkey and cook until done (be sure to break it up since super lean ground turkey tends to like to stick together)

Add the Red Pepper and Zucchini and stir fry for an additional 5-6 minutes until they begin to soften

Add seasonings and cook for an additional 3-5 minutes.

Makes 4 good sized servings!
