True Southern Baked Macaroni Cheese (Macaroni Pie)

Introduction

This recipe is from my mother-in-law. She is a true southerner from South Carolina and an excellent cook! This is a very popular dish in the area she lives, and my family LOVES it! This is the original (full fat) version of it. Please also look at my healthier version of it. This recipe is from my mother-in-law. Ingredients

    8 oz. Macaroni
    2 1/2 T. Butter
    2 large eggs, beaten
    1 - 13 oz. can evaporated milk
    1 1/2 c. milk
8 oz. extra sharp cheese (divided - half grated, half cubed in small chunks)
    1 t. salt

Directions

Boil macaroni - add 2 minutes to the directions on package. (If you don't boil the macaroni enough, it will soak up the milk.) Drain macaroni, add butter, stir until butter is completely melted.

As the Macaroni is boiling, you can mix together in a bowl, the beaten eggs, milks, cheese, and salt.

Stir macaroni and butter into milk/cheese mixture. Pour into a lightly greased casserole dish. It is optional, but you can sprinkle a little pepper over the top. Bake at 350 for about 45 minutes or until set in the middle.
