Spicy Chicken in a Cream Sauce

Introduction

Inspired from a Taste of Home "Diet Comfort Foods" cook book, I took one of their recipes and added a creamy sauce that works well with rice. Note: sodium could be cut drastically by using fresh salsa rather than something pre-made. My husband said it reminds him of an old special Taco Bell ran. I guess that's a good thing. Ingredients

    NOTE: Read "T" as tablespoon and "t" as teaspoon

    4 chicken breasts (4 ounces each)
    1 t onion powder
    1 t ground cumin
    1 t chili powder
    2 slices Kraft Free Singles: pepperjack cheese
    1 slices Kraft Free SIngles: swiss cheese
    1/4 cup Prairie Farms fat free sour cream
    1/2 t corn starch
    1/2 cup water
    6 T medium salsa (Chi Chi's brand used for info)

Directions

Slice the chicken into slices that are approximately 1/4-1/2 inch thick. I cut mine the short way at and a slight diagonal. There is no wrong way to slice it.

Put the chicken in a large pot.

Place over high heat.

Add the water, salsa, onion powder, cumin, and chili powder in with the chicken.

Cover the chicken. Allow the dish to come to a boil and cook until done. This will be about 20-30 minutes. Stir occasionally to prevent sticking or burning.

When the chicken is fully cooked, turn to a low/low-medium heat.

Stir in the sour cream and put the cheese slices in.

Cover and allow the cheese to melt.

When the cheese has completely melted, add in the corn starch and stir in. This should thicken the liquid into a cream sauce. Allow to simmer 2 or 3 more minutes to thicken.

Tastes great served over rice; rice not included in nutritional information.

Makes 4 servings; 1 serving = approximately 1 four ounce chicken breast.
