Ingredients

10 sea scallops
1 T olive oil
1/2 onion
1/2 yellow pepper
1 C spinach, fresh
1/4 C parsley, fresh
1/2 C canned artichoke hearts, drained
1T Tony Chaceres seasoning blend, or favorite
4 oz Dried linguini
Directions
Cook linguini as directed.
In a frying panover med heat, add oil and heat until hot. Add all veggie and fry together until desired doneness. Add scallops and cover. Let cook for approx 5 mins, checking occas. Remove lid, add seasoning and cream. Serve over pasta. Makes 2 servings, and is easily doubled or trippled.
