Spicy Sauteed Veggies

Introduction

I like to cook these veggies and serve them on toasted flour tortillas or over brown rice (not included in nutrition info). I like to cook these veggies and serve them on toasted flour tortillas or over brown rice (not included in nutrition info).
Number of Servings: 4

Ingredients

    2 medium sized Zucchini, washed and sliced into bite-sized pieces
    1.5 medium sized Sweet Onions, chopped into quarter-sized pieces
    1 pkg of Fresh n Clean Mushrooms, sliced
    1.5 TBSP Extra Virgin Olive Oil
    2 TBSP Kikkoman Teriyaki Marinade & Sauce
    0.5-1 ounce of Water
    Garlic Salt to taste
    Sea Salt and fresh Ground Black Pepper to taste

Directions

Chop all veggies to bite sized peices.
Using an electric skillet, add the Extra Virgin Olive Oil and minced garlic. Turn heat on to 300 degrees.
As soon as the garlic starts to sizzle, add the veggies, water, red pepper flakes & Teriyaki sauce.
Stir gently and then cover for 5-7 minutes.
Take cover off and stir in garlic salt, salt and pepper to taste.
Turn up heat to 400 degrees and let it cook with the cover off so the liquid cooks down.
Stir gently but frequently until desired doneness. Do not over cook or the zucchini will get mushy.


SIDE NOTE: If you'd like to serve the veggies on tortillas, I use El Milagro Flour Tortillas. I toast them on a flat, dry pan over Medium High heat, turning frequently until desired toast. DO NOT PUT IN STANDARD TOASTER. (tortiallas not included in nutrition info).
