Number of Servings: 16

Ingredients

    1 package 16 bean soup mix
    8 cups water
    4 beef bouillion cubes
    2 stalks celery, sliced
    2 carrots, peeled and sliced
    1 medium onion, chopped
    2 cloves garlic, minced
    14 oz can tomatoes
    1 small green pepper, chopped
    1/4 tsp dried dill
    6 oz can tomato paste
    2 c McKenzie's frozen gumbo vegetables

Directions

Discard flavoring packet or save for another use.Rinse and pick over beans. Cover with 4-6 cups of water and soak overnight.
Drain beans, rinse, and place in large pot with 8 cups water, bouillion, carrots, celery, onion, garlic, tomatoes and dill. Bring to boil, reduce heat, cover and simmer 90 minutes. Add frozen vegetables, tomato paste, green pepper and a dash of black pepper. Simmer 30 minutes more.
Makes 16 servings, 1 cup each.
