Mini Banana Chocolate Chip Muffins

Introduction

This is a really yummy muffin! I made mini ones because they are the perfect size for my nephew. They are healthy and a good little snack when you are craving something sweet. This is a really yummy muffin! I made mini ones because they are the perfect size for my nephew. They are healthy and a good little snack when you are craving something sweet.
Number of Servings: 30

Ingredients

    1/2 cup of Balkan yogurt (or Greek yogurt)
    2 ripe bananas
    1 1/2 cups of whole wheat flour
    1 tsp baking soda
    1 tsp salt
    1 egg
    1 cup of sugar
    1/4 cup of ground flax seed
    1/2 cup of chocolate chips

Directions

Mix yogurt, egg and bananas together until creamy. Add flour, sugar, baking soda, salt, and flax. Mix until moistened. If mix is not wet enough, add 1 tbsp more of yogurt until it is moist and all dry ingredients are mixed in. Fold in chocolate chips.

Grease mini muffin tins.

Preheat oven to 375, bake for 20 mins.

Makes 30 mini muffins :)
