Steven's Pizza Dough or French Bread

Ingredients

    303 g. Organic King Arthur Bread Flour
    3/4 c. warmed water (also in spray bottle)
    1 T. Honey
    2 1/2 tsp. dry yeast stirred into the water honey mixture
    1 1/2 tsp. Kosher salt
    2 T. Olive Oil, I use light Olive oil to reduce calories

Directions

Mix Flour and Salt in work bowlof stand mixer. Proof the yeast 4-5 minutes or until foamy. then add Olive Oil. Using the paddle attachment on level 2 of mixer gradually add yeast and olive oil mixture to the flour. Mist with a spray bottle of water until slightly sticky, and douch ball comes together and all dry ingredients are incorporated. Switch to the dough hook and mix on level 2 for 7-8 minutes. Form into a ball with your hands. Drizzle a little olive oil into the work bowl and toss the dough ball into the bowl and coat with the oil. Cover with plastic wrap and let rise until double in size or over night in the fridge. Place on the counter and let come to room temperature if refrigerated for 2-3 hours. Form into pizza on corn meal coated pizza stone. cover with your favorite ingredients and bake at 550 degrees or until cheese on top is bubble and browned.
