Ingredients

Green Giant Shoepeg White Corn, Frozen, 1 cup
Celery, raw, 1 cup, diced
Onions, raw, 1/2 cup, chopped
Poblano, Red or Green Pepper, Raw (1 Pepper), diced
Black-eyed peas, 2 Cup, drained
Black Beans, S&W (whole can), 15 oz, drained and rinsed
Dressing:
1/3 cup red pepper rice vinegar
1/2 cup granulated sugar or 1/2 cup Splenda Sugar Blend
1/2 teaspoon Hot Hungarian paprika
Jalapeño Pepper, diced, Mt. Olive, 1 tbsp
Directions
Layer vegetables and beans in order listed. Bring vinegar and sugar to a boil over heat or in microwave. Remove from heat; add paprika and jalapeño pepper. Pour over vegetable/bean mixture (DO NOT STIR). Refrigerate 2 hours or overnight. Stir to serve.
