Creamy Chicken, Bacon and Leek Cottage Pie



Introduction

Creamy chicken with bacon and leeks topped with mashed potato - comforting meal in one! If you want to cut out some of the fat, you could substitute fat free condensed cream of chicken soup and leave out the bacon. Ingredients

    Chicken and Leek Filling:

    330g boneless, skinless chicken breasts, cut into bite sized pieces
    4 rashers of Wall's Smoked Bacon
    250g Batchelor's Condensed Chicken and White Wine Soup
    1 tsp thyme
    salt and pepper to taste
    1.5 Tbsp Extra Virgin Olive Oil

    Mashed Potatoes:

    900g Maris Piper potatoes, peeled and quartered
    1 Tbsp Flora Light or other light margarine
    1/4 cup whole milk
    salt and pepper to taste

    Top with 4 Tbsp grated parmesan cheese



Directions

Start boiling the potatoes to make your mashed potato top.

Meanwhile, pour half a tablespoon of olive oil into a hot skillet or frying pan, fry bacon and remove when cooked. Then add another half tablespoon of oil and brown chicken until cooked through. Remove chicken from pan. Add the other half tablespoon of olive oil and sautee leeks until soft then add in the soup and the cooked chicken. Mash the potatoes with the light margarine and milk. Spoon the chicken mixture into a shallow casserole dish, top with the mashed potatoes, use a fork to create stiff peaks in the potatoes, top with grated parmesan cheese, then bake in a medium-hot oven, about 190 C or 350 F until the peaks of the potatoes are browned and mixture is bubbling - about 15 minutes or so.
