Turkey and vegetable Stir fry

Ingredients

    4 tbsp Extra Virgin Olive Oil
    8oz/225g turkey, cut into strips
    1 red pepper, sliced
    4oz/100g mushrooms, sliced
    4oz/100g zucchini, sliced
    1 cup of chopped onion
    3 sticks of celery, sliced
    8oz/225g broccoli, broken into smal florets
    8oz/225g carrots, cut into strips
    2 tbsp soy sauce

Directions

Heat 2tbsp of oil and quickly fry the turkey for about 8 minutes, until sealed on both sides
Add the remaining oil and all prepared vegetables and fry over a medium heat for 15 minutes, stirring frequently
Add soy sauce and stir over heat for a further 5 minutes.

Can be served with brown rice

Serves 4
