Tomato-Cheese Frittata

Introduction

Frittatas are a great brunch item. They’re simple to prepare but look impressive. This particular frittata is a great dish for the summer months when your basil is flourishing and tomatoes are at their peak. Use one large or two plum (Roma) tomatoes instead of the cherry tomatoes if that’s what you have on hand. The egg yolk creates a richer frittata, but you can use all egg whites if you prefer. Ingredients

    2 shallots, finely chopped
    1 garlic clove, smashed and minced
    1 egg, beaten
    2 egg whites, beaten
    1 tbsp crumbled feta cheese
    1 cup cherry tomatoes, cut into quarters
    4 large leaves of fresh basil, shredded

Directions

1. Preheat the oven to 375° F. Place a 6-inch,
ovenproof omelet pan or small saute pan over
moderate heat. Coat the pan with nonstick
cooking spray. Once the pan is hot, add the
shallots and garlic, and saute until the shallots
are tender, about 5 minutes.
2. In a small mixing bowl, whisk together the
egg, egg whites, and cheese. Add the tomatoes
and basil and pour over the shallot mixture.
Stir just to combine.
3. Move the pan to the oven and bake until the frittata puffs and is just set in the center, about
5 minutes.
